I hope you are all having a wonderful Easter long weekend. I love this time of year. It is a full break without the stress of Christmas. However, Christmas isn’t the only time for holiday themed goodies! Today I’m sharing with you one of my most loved holiday desserts. Legitimate Easter Carrot Cake.
All you need to do is choose a carrot cake recipe and bake it in a square tin. The next step is super important. Wait for it to cool. Not luke warm. It needs to be ENTIRELY cooled down. Once this is done you can divide your cake in half and cut yourself some triangles!
Next, I make a batch of icing with 3 cups of icing sugar, a tablespoon of butter and some boiling water to make a running consistency. Divide the icing sugar into three bowls. 3 parts in one, 2 parts in another and 1 part in the final bowl. With the addition of orange and green food colouring, these will be the coloured icing respectively. No colour is needed for the smallest bowl.
All you have got to do is place each icing batch into a zip lock bag. Cut a large hole into the orange one, as you need to cover the entire triangle, and really small corner cuts into the green and white patches.
Squiggle wiggle and you’re done!
