At this time of year homes are a revolving door for everyone to wander through. The easiest thing to whip up on short notice is this banana bread. It is super chewy and with slapped with butter it makes all your banana bread dreams.
So behold, mix 1 cup of sifted self raising flour with a cup of caster sugar. Make a well in the middle and add 50g of melted butter, 1tsp of vanilla, 1/4 cup of milk, 3 mashed bananas and 1 beaten egg into the well. Stir all until combined.
Bake for 30-35 minutes in a 160c fan forced oven, or until a skewer comes out clean. Allow to cool for 10 minutes before serving or transferring to a wire rack. Serve with butter and a sprinkle of cinnamon.
As I am Coeliac I substituted the flour with White Wings gluten free self raising flour. It was delicious!
